Crispy Fish Wings

Ladies and Gentlemen, I present to you a tasty crispy Fish Wings Recipe! Fish wings are absolutely delicious and a great way to use more of your catch reducing waste. Honestly once you start eating fish wings you won't go back. The best thing I find to do especially if there is a rugby event or another big sporting event and you are going to get people around is to freeze you fish wings until you have 12 pairs or more.

For this recipe we have a mixture of wings in here including Blue Mowie, Flathead and Bream.

Crispy Fish Wings Ingredients

10 Fish Wings - In this recipe ive used Blue Morwong, Flathead and Bream Wings

Sea Salt

Black Pepper

White Flour

Vegetable Oil

Smoked Paprika

Free Range Eggs

Garlic Granules

Chopped or Dried Chilli Pick your heat!

Kewpie Mayo

Sriracha Sauce

Peri Peri Mayo

Limes


Items Needed

2x Bowls

A Spoon

A Sharp Knife

Method:

Firstly ensure all scales have been removed nothing more annoying than getting stuck into your fish wings and keep coming across fish scales.


Begin by cracking an egg or two into a big bowl and whisk it up. You want enough egg to cover over your wings. You can always start with 1 egg and see how that goes, 1 egg should do 4-6 wings depending on how big your wings are. Let them have a soak for 10 minutes or so.


Whats in the flour mix well let me tell you!

Start off by putting plain white flour into a bowl. Add paprika, salt, pepper, garlic granules and chilli to my own desire. Its trial and error to your own taste buds and unfortunately like most cooking I don't measure it out I just eye it in.


Remove your wings 1 by 1 from the eggy soak. and let the big gloppy bits of egg off the

Bring a frying pan with vegetable up to heat. Sprinkle a tiny amount little flour mix into the oil and see if it starts bubbling instantly. If it does its ready. Reduce the heat if its too hot and burning the oil.

Now fry your wings up. Using tongs place your wings into the oil I try to only flip them once, so keep them face down until its perfectly crispy, then flip.


Place some kitchen roll "PAPER TOWEL" onto a plate and place the freshly fried wings onto the plate this will absorb excess oil to ensure extra crisp.


You can add additional salt on top in most cases I dont.


Once all your wings are completed place them onto a serving board and compliment with Kewpie Mayo, Sriracha and peri peri Mayo.

Limes for alittle something something. Just a super easy quick meal everyone can enjoy.
