Citrus Butter Fish Recipe + Bonus Red Pasta Side

This is a super easy recipe that takes a minimal amount of prep, tastes delicious and will wow a crowd. Super romantic with a glass of wine to level up that date night. It will also make you look incredibly cultured and experimental as a culinary genius.

Citrus Butter Fish Ingredients

Lime Zest - Grate Those Unwaxed Limes

Orange Zest

Olive Oil

Butter

Mint Leaves

Salt and Pepper

Freshly Speared Red Rock Cod - You can use most white fish and this works really well.

Optional* finely chopped garlic (I no longer use)


Additional ingredients for the Red Pasta Side

Pasta

Authentic Passatta

Fresh Parsley

Mint Leaves

Salt and Pepper

Olive Oil

Now whilst this recipe will suit most fish I particularly like it either Red Rock Cod or Lobster (their meat is quite similar)


So start off by filleting your fish.

The alternative is to score the fish and bake it whole with the same ingredients but today we will focus on the pan fry fillets version of this dish.


Next put your unspecified amount of butter into a pan on low heat, DON'T BURN THE BUTTER (I will never judge you for the amount of butter you use but all I ask is that you don't judge me)

Keeping the butter on a low heat once melted then add bowl of Lime zest, Orange zest and chopped mint leaves into the frying pan.

Then season with salt and pepper to suit your own tastes. Let simmer for about 1-2 minutes then remove from the heat.


Now you can do this recipe as a baked whole fish but on this occasion I chose to do it with the fish fillets. So fillet the fish like the fish pro we know you are. If you do a bad job at filleting you can keep it to yourself but make sure you feel a little bad about it. Be sure to score the skin side of the fish a few times to prevent it from curling up.


Add butter and olive oil into the pan and bring up the temperature, then add the fish fillets skin side down. Cook until the skin is crispy and flip the fillet if the top of the fillet is uncooked. Add a small amount of of Citrus Butter Sauce onto the fish as it cooks.


Remove the fish fillets from the pan and then drizzle more citrus butter sauce on top.

For the Red Pasta Side

Cook some pasta

Add some Olive Oil to a pot bring up the heat then add some crushed garlic and some chopped parsley, then after the garlic is lightly browned off add the Passata into the same pot, finally season with some salt and pepper ensuring the sauce is well mixed together.


Strain the pasta and place onto the dish then dress the pasta with the red sauce. Add a couple of mint leaves on top for some presentational flare that will make you look like a full blown Italian.
